Artsakh Gatarecipe of Armenian cuisine, gata is prepared from yeast sponge dough with butter and sugar. The filling for the gata is quite interesting, it includes three ingredients - butter, flour and powdered sugar. Gata is very tasty, especially with fruit and cheese.

Recipe Ingredients

Water 200 ml
For Dough
Wheat Flour 750 g
Ghee 200 g
Eggs 5 pcs
Sugar 200 g
Salt 1 tsp
For Filling
Wheat Flour 800 g
Ghee 350 g
Additionally
Egg Yolk 1 pcs

Cooking Recipe

In order to cook Artsakh gata, you first need to make a batter. Dilute the yeast in warm water, add flour, mix, cover with a film and put in heat for 30 minutes.

During this time, grind the melted butter in a separate bowl. Rub the oil for 10 minutes, it is better to do this with a mixer at low speed. Without ceasing to grind, add sugar, eggs, vanilla, salt and grind until smooth. Mix the resulting mass with dough and knead for 5 minutes. Again, without ceasing to interfere, gradually add the sifted flour in parts. Knead a smooth dough, cover with cling film and leave in heat for 35 minutes.

While the dough is rising, you can work on the filling. Softened ghee rub with flour, powdered sugar or sugar. At the end of rubbing, the filling should be in the form of small crumbs.

Divide the risen dough into 7-8 parts, while it is not necessary to sprinkle the table with flour, a sufficient oil content will prevent the dough from sticking to your hands. Roll each piece of dough into a cake with a thickness of approximately 5-6 mm. Put 200 g of filling in the middle of the cake, connect the edges and give the gate a round shape.

Turn the cake seam side down, roll out 1.5-2 cm and put on a baking sheet. Make a few punctures with a fork, grease with beaten yolk and put in an oven preheated to 180°С (355°F).

Bake artsakh gata for 15-20 minutes. Take the gata out of the oven and let it cool, serve the gata with meat, fruit or cheese.
