For a Mexican recipe, eggplant with red hot pepper, wash the eggplant, cut into slices, about 0.5 cm, and fry on both sides in vegetable oil. Transfer the fried eggplants to a napkin to remove excess fat.

Bake hot red peppers in an oven preheated to 180°С (355°F), for about 10-15 minutes, then remove the peel, remove the seeds and cut into thin strips.

Pour vegetable oil into chopped garlic, add chopped hot peppers, salt, pepper and mix. Let the sauce infuse for 30-40 minutes, and then pour over the fried eggplants.
