Catalan Cream Recipe
For the Catalan cream recipe, dilute the starch in a small amount of cold milk. In the remaining milk, put cinnamon, lemon zest, put on fire until boiling.
After the milk boils, set it aside to cool. In a separate bowl, grind the yolks with sugar and combine with diluted starch. Remove the zest and cinnamon from the cooled milk, pour in the mixture of yolks and starch, mix and put on medium heat, stirring occasionally.
Boil the cream for 10-12 minutes until the moment when the cream begins to thicken. Pour the prepared cream into cups, sprinkle a small layer of sugar on top and place under the grill for 3-5 minutes, until the sugar is caramelized. Serve Catalan style cream as a dessert, warm or chilled.
