Arroz Con Leche Recipe
For the arroz con leche recipe, it is better to take rice round, not steamed, with a high starch content. Rinse the rice, add water so that it only covers the rice, and put on fire. Cook the rice while stirring until all the water has evaporated.
After the water has evaporated from the rice, pour in hot milk, add cinnamon, lemon and orange zest. Mix everything well and put on fire.
Cook the rice over medium heat, stirring occasionally, for about 20-30 minutes. When the rice mass is completely cooked, remove from heat, remove the cinnamon and zest. Pour sugar, mix, arrange in bowls and let cool.
After the arroz con leche has cooled down, put the bowls in the refrigerator for 20 minutes. Before serving, arroz con leche can be garnished with a cinnamon stick and finely chopped zest.
