Pickled daikon - Korean cuisine recipe, tiny cold cubes of daikon marinated in sweet and sour and slightly salty brine are very refreshing. This daikon will complement any meat or chicken dish very well.
The pickled daikon recipe is easy to make. Peel the daikon and cut into cubes with a side of 1 cm.
Combine sugar, vinegar, salt and water in a large bowl or container in which the daikon will be marinated. Mix everything well until the salt and sugar are completely dissolved.
Add the daikon, mix a few times and transfer to an airtight container or glass jar. Place the container in the refrigerator for at least 2 hours before serving. Marinated daikon can be refrigerated for up to two weeks.
