Parkin - Yorkshire gingerbread cake. Light molasses can be replaced with honey, maple or corn syrup, as well as sugar syrup. Parkin is very easy to cook, especially if you have an assistant - a food processor. It remains almost only to control the process. Gingerbread can be stored for a long time, so it can be cooked in advance.

Recipe Ingredients

Wheat Flour 350 g
Sugar 4 tbsp
Honey 100 ml
Eggs 1 pcs
Butter 50 g
Milk 200 ml

Cooking Recipe

To cook parkin, add sugar, baking powder, ground ginger to the sifted flour and mix.

In a separate bowl, heat the oil with honey or molasses to a liquid state and cool slightly.

In a mixture of flour, gradually stirring, pour in the molasses with butter and mix well. It should be something like crumbs.

Beat the egg with a whisk with milk until smooth, it is not necessary to beat into a lush foam.

Pour the beaten eggs into the crumbs and mix well until smooth. The best way to do this is with a food processor.

Line a rectangular baking dish with parchment paper and pour the batter into it. Flatten the dough with a spatula and place in the oven. Bake parkin for 1 hour at 150°С (300°F).
