Mamalyga is a porridge made from cornmeal according to a Moldovan cuisine recipe. Sometimes hominy is used as bread, for this the porridge must be evaporated for a long time, and then cut and served.
Cooking Recipe
For the mamaliga recipe, lightly dry the cornmeal on a baking sheet. Pour a third of flour into boiling salted water.
Mix well with a wooden spatula and cook over low heat for 10 minutes. Then add the remaining flour and cook in a water bath for 20 minutes. Mamaliga can be served with cheese, cracklings, milk, greens.
