Mexican pumpkin soup – a Mexican cuisine recipe, lime is very refreshing and revitalizes the shades of pumpkin in the soup.

Recipe Ingredients

Pumpkin 1 kg
Onion 2 pcs
Butter 2 tbsp
Milk 2 cups
Sour Cream 0.5 cup
Lime 1 pcs

Cooking Recipe

For the pumpkin soup recipe, peel and finely chop the onion. Wash the pumpkin, cut off the skin, remove the seeds and cut into cubes. Heat the butter in a saucepan with a thick bottom, put the chopped pumpkin and onion, put on medium heat and simmer for 12-15 minutes, until the pumpkin is soft.

Pour milk into a saucepan, stir, bring to a boil, pepper and heat for 2-3 minutes. Remove saucepan from heat, cool slightly, then transfer to a food processor and puree. Pour the puree into a saucepan, add the broth and cook over medium heat, stirring occasionally, for 10-15 minutes.

Mix sour cream with 1 tbsp. lime juice. Pour hot pumpkin puree soup into bowls, top with sour cream and lime and serve.
