Minestrone – light Italian vegetable soup. Minestrone can be served hot or cold.

Recipe Ingredients

Onion 1 pcs
Carrots 1 pcs
Garlic 1 clove
Tomatoes 2 pcs
String Beans 200 g
Cauliflower 150-200 g
Bell Pepper 1 pcs
Parsley 4 twigs
Hard Cheese 100 g
Pasta 150 g
Butter 1 tbsp
Vegetable Oil 1 tbsp

Cooking Recipe

For the minestrone Italian soup, fry the minced garlic and chopped onion in a saucepan with vegetable oil and butter. Add diced carrots, celery root, fry for 2-3 minutes. Add broth, bring to a boil and simmer uncovered for 10 minutes.

Add green beans, followed by chopped tomatoes, peeled and seeds. After 2 minutes, add pepper and cauliflower. Salt, pepper, add pasta and cook for 5 minutes. Pour minestrone into bowls and sprinkle with grated cheese and chopped herbs.
