To cook recipe of Italian cuisine meatballs from boiled meat, wash potatoes and boil in their skins. While still hot, peel potatoes and mash until smooth.

Boil beef, pork or chicken. Settle all the cartilage, skin and fat, and then cut. You need to cut the meat into small cubes, but not too much so that you do not get mashed potatoes.

Wash the parsley, remove the twigs, only the leaves are needed. Chop the parsley leaves along with the garlic.

Cheese, preferably Parmesan, grate on a fine grater. If there is no parmesan, you can use any low-fat hard cheese.

In a deep bowl, mix potatoes, meat, parsley with garlic and grated cheese. Add eggs, salt, pepper and mix well until smooth.

From the prepared minced meat, form small meatballs with your hands and roll them in breadcrumbs. To make the stuffing less sticky to your hands, soak your hands in cold water before shaping.

Pour vegetable oil into a preheated pan and lay out the prepared meatballs. Fry meatballs on both sides until golden brown. Serve polpette hot or cold, they are good in any form.
