The Transcarpathian goulash with beans recipe is very simple. Rinse the beans well and boil. Cut the pork arbitrarily, chop the onion finely, peel the carrots and cut into cubes or circles. Cut the sweet pepper into slices, cut the potatoes into cubes, remove the peel from the tomatoes and finely chop or grate.

Heat oil in a saucepan, add onion and stir. Fry the onion over medium heat until translucent. Then add paprika, stir and cook for 1 minute.

Add chopped pork to the onion and cover with a lid. When the meat turns white, add chopped peppers, carrots and grated tomatoes. Cook under a lid over medium heat until the meat is half cooked.

Pour potatoes into the meat, pour in hot water so that it covers the potatoes and cover with a lid. Cook the goulash over medium heat until the potatoes are soft.

Add boiled beans to the almost ready goulash and cook for another 5 minutes. After adding finely chopped greens, mix, cover and turn off the heat. Let goulash infuse for 10-15 minutes and can be served.
