For lentil soup with croutons, sort the lentils, rinse, add water to cover the lentils, and put on medium heat. Cook the lentils, stirring occasionally, until the water has completely evaporated. After gradually pour in the broth, mix and strain the soup through a sieve.
Separately, heat the butter, add flour and fry, stirring, for 1-2 minutes. Pour a little broth into the flour fried with butter and mix so that there are no lumps. It is necessary to dilute the flour with broth until it reaches the consistency of sour cream.
