Scalded flatbread pie (Su böreği) is a Turkish recipe, a very hearty layered pie with cheese.

Recipe Ingredients

Wheat Flour 1 cup
Eggs 2 pcs
Egg Yolk 1 pcs
Parsley 4-5 twigs

Cooking Recipe

For the bryndza cheese pie recipe, beat the eggs into the sifted flour, pour in 1-2 tbsp. salted water and knead the dough. Knead a smooth, elastic dough, divide it into 7 parts (one part is slightly larger than the rest), roll the dough into balls, cover with a damp cloth and set aside for 20-30 minutes.

When the dough has rested, roll out the balls into thin layers, like tissue paper. Boil water in a deep saucepan. When the water boils, reduce the fire and carefully lower the cakes in turn into the water for 2-3 minutes.

Grease the baking dish with vegetable oil, put a large layer of dough on the bottom of the form. Lubricate the first sheet of dough generously with vegetable oil and put three scalded cakes on it, also lubricating each layer with oil.

Mash the bryndza cheese with a fork and mix with finely chopped parsley. Put a layer of filling on top of the cakes and cover with the remaining scalded cakes, brushing them with oil.

Mix the yolk with 1 tbsp. vegetable oil and brush the top of the pie with it. Prepared cheese pie put in preheated to 170-180°С (340-355° F) oven and bake for 35-40 minutes. Transfer the finished bryndza cheese pie to a dish, cut into squares and serve.
