Moldovan rooster soup – Moldavian cuisine recipe, rich and hearty rooster soup. If there are no fresh tomatoes, you can use a small amount of tomato paste, which must first be diluted with water or use tomato juice. The broth for rooster soup can be made on the bones of the same rooster.

Water 2.5 l
Potatoes 3 pcs
Carrots 1 pcs
Onion 1 pcs
Tomatoes 1 pcs
Bell Pepper 1 pcs
Red Wine Vinegar 1-2 tbsp
Wheat Flour 1-2 tbsp
Greens 0.5 bunch

Cooking Recipe

For the rooster soup recipe, peel the onion and cut into large pieces. Peel the carrots and cut into half rings, peel the potatoes and cut into large pieces. Disassemble the rooster, fill it with water and put on a strong fire. When the water boils, reduce the heat, remove the foam, cover and cook for 1 hour. After the time has elapsed, check - if the meat is soft, the broth is ready, if not, cook further. When the broth is cooked, take out the rooster meat and strain the broth.

Heat vegetable oil in a frying pan, add onion, mix, add carrots and simmer over medium heat for 10 minutes. After pour in the vinegar, mix and simmer for another 5 minutes. Add stewed vegetables, potatoes to hot rooster broth, mix and cook for 15 minutes or until potatoes are ready.

Scald the tomato with boiling water, remove the peel and chop into a puree. When the potatoes are cooked, add finely chopped bell pepper, tomato puree and ground red pepper, cover and cook for another 5 minutes. In a dry hot frying pan, brown the flour and season the soup with it, salt and cook for another 5 minutes. When serving rooster soup sprinkle with finely chopped herbs, add pieces of rooster and serve.
