Rural chilaquiles (Chilaquiles de rancho) is a Mexican recipe, very good for breakfast, chilaquiles can be served with fried beans or scrambled eggs.

For the rural chilaquiles recipe, cut the pepper in half, remove the seeds and cut into long strips. Cut the tortillas into strips about 5 cm wide and fry in hot vegetable oil. Transfer the fried totillas to a paper towel and let the excess fat drain.

Coarsely chop one onion, combine with tomato puree, or tomatoes and chop with a food processor into a homogeneous puree-like mass. Transfer the tomato-onion puree to the pan where the tortilla strips were fried, and simmer over medium heat for 2-3 minutes, then add the chopped pepper and simmer for another 10 minutes.

When the sauce thickens, add the fried tortilla strips and fry until they soften slightly and absorb some of the sauce. Ready rural chilaquiles transfer to a prepared plate, sprinkle with finely chopped onion, sprinkle with grated cheese, and put on top a spoonful of heavy cream.
