Kifle with cheese – a Bulgarian cuisine recipe, you can use anything as a filling: jam, berries, fruits, any vegetables, bacon, sausages, etc. Milk can be replaced with whey or kefir diluted with water.

- Milk 250 ml
- Dry yeast 1,5 tsp
- Sugar 1 tbsp
- Salt 0,5 tsp
- Wheat flour 500 g
- Eggs 1 pcs
- Hard cheese 150 g
- Butter 80 g

To cook kifle with cheese dilute the yeast in warm milk, add sugar, salt and half the flour. Mix everything, cover with a towel and put in a warm place for 1 hour. After the dough comes up, add melted butter (not hot), stir, and, without ceasing to stir, add the rest of the flour.
Knead a smooth dough, cover with a towel and put back in the warmth for 1.5 hours, the dough should double.
The best choice for kifle cheese is one that melts well. Since this amount of dough will yield approximately 8-10 kifle, accordingly, the cheese must be cut into 8-10 identical cubes. Knead the comes up dough and divide into 8-10 pieces.
Roll each part into an elongated cake about 0.3-0.5 cm. On one side of the cake, make cuts, stepping back from the edge by 1 cm. On the other side, put a prepared block of cheese and roll it in a roll towards the cuts.
