Sweet pancakes (Dorayaki) – a Japanese recipe, traditionally dorayaki pancakes are folded in pairs, smearing them with sweet bean paste an. In appearance, they resemble a small gong - hence the name of the dish.

For the Japanese sweet pancakes recipe, mix powdered sugar with eggs and maple syrup. When the sugar dissolves, add flour and lightly beat with a whisk so that the dough is without lumps. Cover the dough with a lid and set aside for 20 minutes. Dilute soda with water, pour into the dough, and mix again.
Grease a heated pan with oil, then remove from heat and wipe with paper. Place the pan over medium heat and pour the batter into the middle. The diameter of the pan should be approximately 13 cm, and the dough should be poured so much that the output is a pancake about 5 mm thick.
Fry pancakes for 2-3 minutes on each side until golden brown. On a fried pancake put 2 tbsp. bean paste and spread, stepping back from the edge of about 2.5 cm. cover the pasta with another pancake, transfer to a prepared dish and serve the pancakes to the table.
