Chicken with sweet pepper is a traditional Roman recipe. It is not necessary to take a whole chicken carcass, you can use thighs or legs, as you like. The recipe is very simple - chicken with a thick, rich and aromatic sauce with the addition of wine and rosemary. Tomato juice can be replaced with tomato sauce or mashed tomatoes.

The recipe for chicken with sweet pepper is very simple. Peel the onion and cut into half rings, remove the seeds from the sweet pepper, cut it in half lengthwise and cut it into half rings the same way as the onion. Heat olive oil in a frying pan and add chopped onion. When the onion becomes soft, add chopped sweet pepper, salt and stir. Simmer over medium heat under a lid until the pepper becomes soft, then add finely chopped basil, stir and remove from heat.

In another frying pan, or you can use this one, after removing the fried peppers, heat up the olive oil, add a sprig of rosemary and peeled garlic. As soon as the aroma starts to come out, put the chicken thighs skin side down. Salt, pepper and fry the thighs on all sides until golden brown.

Then pour in the wine and continue to fry the thighs on high heat for about 5 minutes. When a thick sauce forms on the bottom of the pan, pour in the tomato juice. Cover and cook for another 30 minutes on medium heat.

Place the stewed peppers in the pan with the chicken, stir and cook under the lid for another 15 minutes over medium heat. The traditional Roman recipe for chicken with sweet pepper is ready.
