Cold Soup on Bread Kvass (Okroshka) – cold soup based on bread kvass, with the addition of vegetables and boiled meat. Sometimes okroshka is prepared with the addition of radish.

Beef 150 g
Potatoes 2 pcs
Eggs 2 pcs
Cucumbers 3 pcs
Bread Kvass 3-4 cups
Mustard 1 tsp

Cooking Recipe

For the okroshka cold soup recipe, prepare kvass in advance or buy it.

Cut peeled and boiled potatoes, boiled meat, fresh cucumbers into small cubes or strips.

Boil the eggs, cut the egg white, grind the yolks with 1 tablespoon of sour cream, salt, sugar, mustard and dilute with kvass.

Add chopped potatoes, meat, cucumbers and egg white to the prepared mixture. Mix everything well. When serving in okroshka add sour cream and chopped greens.
