Cold beetroot soup (Hladnik) – a recipe for Belarusian cuisine, hladnik is cooked on beet kvass, sometimes beet tops are added to it.

Recipe Ingredients

Beet Kvass 1.5 l
Beets 2 pcs
Cucumbers 2 pcs
Eggs 2 pcs
Onion 2-3 pcs
Dill 3-4 twigs
Parsley 3-4 twigs

Cooking Recipe

For the beetroot soup recipe, boil the eggs, peel and cut into two halves. Boil the beets, let cool, peel and cut into strips. In cold kvass, add beets, cucumbers cut into strips or slices, finely chopped greens and salt.

When serving on a plate with beetroot soup put half a boiled egg. If desired, beet kvass can be diluted with cold sparkling water.
