To prepare a recipe Uzbek dishes quince jam, wash the fruits of quince, peel, cut into 4 parts and remove the seed boxes. Cut the quince into slices of approximately 5 mm thickness and fill with water so that it slightly covers the quince. Put the pan with quince on a strong fire, and when the water boils – reduce the fire and cook until the quince is soft.
Remove the boiled quince with a slotted spoon, and strain the broth. Pour sugar in 1.5 cups of broth, mix and put on fire.
5 minutes after the syrup boils, pour quince and cook over low heat, stirring occasionally, for 1-1.5 hours.
By this time, the quince slices will become transparent, and the syrup and quince itself will change color, turning red. At the end of cooking, add the vanilla sugar, quince jam, mix and place in jars for storage. Quince can be stored in the refrigerator or in the pantry.
