Shrimp cheese mousse - a recipe for French cuisine, if there is no mold for solidification, you can use the peel of a lemon or orange, cut it in half and remove the pulp.

For the shrimp cheese mousse recipe, soak the gelatine in 120 ml of cold water and set aside to swell. Remove the peel from the lemon in the form of shavings, cut the lemon in half and squeeze out the juice. Finely chop the shrimp, mix with chopped cilantro and pour over lemon juice. A few shrimp should be left uncut, they will be needed for decoration, but they should also be poured with lemon juice for pickling. Set shrimp aside to marinate for 30 minutes.
Mash the feta cheese with a fork, add the shrimp, and beat with a mixer into a fluffy mass, gradually adding cream. Dissolve the swollen gelatin in a water bath and pour into the cheese mass. Add a few drops of Tabasco sauce and beat again for 1-2 minutes.
Transfer the prepared shrimp cheese mousse into molds and place in the refrigerator to set. When serving, remove the mousse from the molds and garnish with shrimp, lemon zest and cilantro.
