For the recipe roasted red pepper yogurt dip cut the pepper into thin strips and fry in vegetable oil with salt.
After the sweet pepper acquires a soft texture, add mint, pepper and set aside until completely cooled.
In a separate bowl, mix yogurt with finely chopped garlic and parsley. When serving on yogurt, add roasted red pepper.
