Baked eggplants with minced meat is a Greek recipe that is very simple and quick to prepare. The combination of eggplant and minced meat is always a winning option. There are recipes where the minced meat is placed in eggplant boats, but then there is always a dilemma of where to put the middle of the eggplant. In this recipe, everything is very simple, the minced meat is placed between the slits of the eggplant. You can add some more spices to the minced meat if desired. Oregano, basil or mint are perfect for it. If the eggplants are large, before making cuts, you can cut them lengthwise, and then cut them.

Cooking Recipe

The recipe for eggplant baked with minced meat is very simple. In a deep bowl, mix the ground beef, finely chopped onion, olive oil, salt, pepper and finely chopped parsley. Cover with film and put in the refrigerator.

Wash the eggplants and make cuts in them approximately 6-8 mm thick. Put the minced meat into the cuts in the eggplants.

Place the prepared eggplants in a baking dish and pour the sauce over them. Bake the eggplants in an oven preheated to 180-200°С (355-390°F) for 40 minutes.

To prepare the sauce, pour olive oil into a frying pan, add finely chopped onion, garlic and stir. Rub the tomatoes on a grater and add to the onion and garlic. Add tomato paste, salt and pepper and stir. Simmer over medium heat for 10-15 minutes.
