Pumpkin pancakes – a Belarusian pancake recipe with pumpkin puree, pancakes are cooked using yeast.

Recipe Ingredients

Pumpkin 1 kg
Milk 0.5 l
Dry Yeast 1.5 tsp
Eggs 3 pcs
Wheat Flour 4-5 tbsp
Butter 1 tbsp
Sugar 1 tbsp
Salt 1 pinch

Cooking Recipe

To cook the pumpkin pancake recipe, you need to peel the pumpkin and seeds, cut into small pieces and boil. When the pumpkin is cooked, wipe it through a sieve or use a dip blender to make mashed potatoes.

Mix pumpkin puree with yeast diluted in milk. Beat the egg and mix well. Continuing to stir, pour in the sifted flour. Cover the dough and set aside in heat for 2 hours.

After the dough comes up, add sugar, melted butter and salt. Mix everything well and set aside for another 30 minutes in heat. The dough should be like thick sour cream.

Grease a frying pan with lard, vegetable oil or a piece of bakon. Using a large spoon or a scoop, put the dough in a pan and spread over the entire surface. Fry pancakes on both sides and serve hot.

When serving, pumpkin pancakes can be sprinkled with powdered sugar.
