For the Piccadilly Salad recipe, boil the potatoes with their skins on, then peel and cut into slices of about 1 cm.
Peel the onion and cut into rings. Rinse salted herring and anchovies, peel and cut into pieces.
Lay the products in layers in the prepared salad bowl. The bottom layer of potatoes, after a layer of onions, and on top a layer of fish. Sprinkle everything with chopped parsley and season with a mixture of oil, vinegar and mustard. Serve Piccadilly salad chilled.
