For carrots in a sweet vinegar marinade according to a Japanese recipe, two large carrots are peeled, washed and cut into thin strips 5 cm long. Salt chopped carrots, mix and set aside for 25 minutes. After the time has elapsed, rinse the softened carrots with cold water and drain in a colander.

In a separate bowl, prepare the marinade by mixing all the ingredients. Pour carrots with prepared marinade and set aside to marinate for 3 hours.

Fry the sesame seeds in a hot frying pan, stirring constantly. Roast the sesame until it starts to burst, then transfer it to a cutting board and chop. Sprinkle carrots with chopped sesame seeds, mix and the dish is ready to be served.
