For the cashew cupcake recipe, chop the cashews and lightly toast.

Beat softened butter with sugar and vanilla in a fluffy, light mass. Whisking continuously, add the eggs one at a time and beat until creamy. Mix flour with baking powder, sift and mix with the resulting mass.

Transfer the prepared batter to a cake tin and place in a preheated oven at 160°C (320°F). Bake cashew cupcake for 1-1.5 hours, and after baking, sprinkle the cake with powdered sugar.
