Mushroom soup with pearl barley – recipe of Belarusian cuisine, mushroom soup is very hearty, with a rich taste.
For the recipe mushroom soup with pearl barley, rinse the pearl barley and soak in cold water for 2 hours. Boil the swollen pearl barley until half cooked.
Boil pre-soaked mushrooms in lightly salted water, rinse and chop. Peel onions and carrots, cut into cubes and fry in vegetable oil.
Pour pearl barley and mushrooms into the hot broth, cook over medium heat for 20 minutes. Then add peeled and diced potatoes, sautéed vegetables and cook until fully cooked.
When potatoes are cooked, salt, pepper, add bay leaf, cover mushroom soup, remove from heat and let it brew for 10 minutes. Pour the finished mushroom soup into bowls and serve with cream or sour cream.
