Traditional Irish lamb stew is a British cuisine recipe, simplicity of the dish and nothing more. If there is no lamb, it can be replaced with beef. Irish lamb can be served in the same bowl where it was cooked. It is best to cook Irish lamb stew in ceramic dishes, such dishes keep the dish warm longer.

For the Irish lamb stew recipe, wash the meat and cut into small cubes. Place the lamb in a roasting pan, season with salt and pepper, add the bay leaf, thyme and lightly mash.
Finely chop the onion and add 2/3 to the lamb. Pour the lamb with water so that it only covers the meat, cover with a lid and put on medium heat. Simmer lamb until tender, about 1 hour.
Cut the potatoes into small cubes, finely chop the parsley. Add potatoes, parsley and the remaining onion to the finished lamb. Cover the lamb Irish style with a lid and cook for 30-40 minutes or until the potatoes are completely cooked through, almost to a mushy state.
Serve Irish lamb stew hot and in the same dish it was cooked in.
