Bake for 15 minutes, and then reduce the temperature to 140-120 degrees and bake for 1.5 hours. At the end of baking, the center of the cheesecake should be slightly damp and firm towards the sides.
When cooling, the cheesecake will sink and cracks and tears may appear, to prevent this from happening, it is necessary to run a knife around the circumference of the cheesecake, separating it from the walls of the mold.
While the cheesecake is cooling and sinking, combine the sour cream, remaining sugar and vanilla sugar in a bowl. Pour the whipped sour cream over the cheesecake, smooth and place in the oven preheated to 140-120 degrees for 15 minutes. After the time has elapsed, remove the dessert from the oven and, without removing it from the mold, let it cool, and then, also in the mold, place it in the refrigerator for 8 hours.
