Patra or patrode is a traditional Indian dish. Cooking alu patra is very easy and fast. alu patra - spiced rolls filled with potato filling - a wonderful appetizer for any table.

Recipe Ingredients

For Dough
Wheat Flour 200 g
Turmeric 0.5 tsp
Butter 50 g
Water 100 ml
Salt 0.5 tsp
For Filling
Potatoes 4 pcs
Sesame 2 tsp
Sugar 1-2 tsp
Ground Ginger 1/4 tsp
Cilantro 1 tbsp
Garam Masala 2 tsp
Salt 1 tsp

Cooking Recipe

In order to prepare the dough for alu patra, you need to mix the sifted flour with spices, add melted butter and grind well. Gradually add water and knead the dough.

The filling for alu patra is prepared as follows. Boil the potatoes in their skins, after they are cooked - peel, mash with a fork and mix with spices.

Roll out the finished dough with a thickness of 3 mm. Put the prepared filling on top of the dough and roll up.

Cut the roll into slices 1 cm wide with a moistened knife. Heat vegetable oil in a deep frying pan or brazier, fry the alu patra on both sides until golden brown. After frying, put alu patra on a napkin so that the oil is a little glassy.
