Potato tortillas - the recipe is very easy and most importantly delicious from potatoes, herbs and cheese. Tortillas are obtained with a crispy crust, but very soft and airy inside.

To cook the potato tortillas recipe, wash green onions and parsley, shake off excess liquid and chop finely. Grate hard cheese, you can on a large one, or you can on a small one, as you like.

Peel potatoes and boil until tender. When the potatoes are cooked, drain the water, and dry the potatoes slightly and mash them into a puree.

Mix mashed potatoes with chopped greens, grated cheese and eggs. After salt, pepper and mix well until smooth.

From the resulting mass, form balls, flatten and roll in flour. If the potato mass is too liquid, you can add a spoonful of flour.

Pour vegetable oil, approximately 5 cm, into a deep brazier or frying pan and put on fire. When the oil is hot, fry potato tortillas in it until golden brown. Serve tortillas with lemon wedges and herbs.
