Refried beans - a Mexican recipe, usually the beans are fried in fat, but it can be replaced with vegetable oil.

Recipe Ingredients

Beans 2 cups
Water 2.5 l
Onion 2 pcs
Smalec 3 tbsp
Celery Root 200 g
Vegetable Oil 0.5 cup

Cooking Recipe

For the refried beans recipe, rinse the beans under cold running water. Transfer to a deep saucepan, pour cold water so that it covers the beans by 5 cm. Set aside the poured beans to swell for 3 hours.

After the time has elapsed, drain the water from the beans, transfer the beans to a saucepan with a heavy bottom or to a roasting pan, add water, onion, lard and bring to a boil. Cover the pan with the beans, reduce the heat and cook for 1.5-2 hours until the beans are soft.

When the beans become soft, add celery, pepper, salt and continue to cook for another 20 minutes. At the end of cooking, remove the onion, celery and pepper.

Heat vegetable oil in a deep frying pan. Finely chop the onion and fry in butter until soft, add half the beans along with the liquid and mash with a crush. Gradually add the rest of the beans, also mashing into a puree.

Fry the beans over low heat, stirring constantly, for 3-5 minutes, until the puree begins to dry out. Put the finished refried beans on warmed plates, sprinkle with grated cheese on top and serve immediately.
