Tomato basil pie - a Spanish recipe, a very simple and delicious shortcrust pastry pie. Tomato and basil pie is best served while warm.

Recipe Ingredients

For Filling
Tomatoes 4-5 pcs
Basil 6-10 leaves
Garlic 2 clove
Olive Oil 2 tsp
For Dough
Wheat Flour 250 g
Butter 100 g
Chicken Eggs 1 pcs
Water 1-2 tbsp
Salt 1 pinch

Cooking Recipe

For the recipe tomato basil pie, grind flour with butter until crumbly, add salt, egg, water and knead a smooth dough. Wrap the dough in cling film and place in the refrigerator for an hour.

After the time has elapsed, roll out the dough into a layer slightly larger than the diameter of the mold. Put the rolled out dough on the bottom of the prepared form so that low sides are obtained. Poke a few holes in the dough with a fork and place in a preheated 190°C (375°F) oven for 10 minutes.

While preparing the base for the pie, cut the tomatoes and mozzarella into circles. Remove the baked cake from the oven, put the chopped mozzarella on the bottom, put the tomatoes on top.

Top the tomatoes with basil leaves, thinly sliced garlic, salt, pepper, drizzle with olive oil and place the pie in a preheated 170°C (340°F) oven. Bake tomato pie for 45 minutes. Tomato and basil pie is best served while warm.
