Croquettes with jamon and cheese - a recipe for Spanish cuisine, croquetas with a crispy crust and a delicate sauce inside, they are very satisfying and you won’t eat a lot of them, in general, they are ideal tapas.

Recipe Ingredients

Wheat Flour 125 g
Milk 300 ml
Jamon 2 slices
Eggs 1 pcs
Butter 50 g
Olive Oil 2 tbsp
Nutmeg 0.5 tsp
Breadcrumbs 100 g

Cooking Recipe

For Jam and Cheese Croquettes, melt the butter and olive oil together in a deep saucepan. When the butter melts, stirring it with a whisk, gradually add flour (75 g) by a tablespoon. You should get a thick paste without a drop of liquid. Also stirring with a whisk, pour in the milk, and mix well so that there are no lumps left.

Whisking constantly, cook the mixture for 1-3 minutes until the mixture is very thick. Season to taste with salt, pepper, nutmeg, add cheese and mix again. Remove the mixture from the heat, let it cool and add finely chopped jamon to it. Cover the resulting mass with a film and refrigerate for 1 hour so that the mass thickens.

Pour flour (50 g) into one plate, season it with salt and pepper. Crack the egg into another bowl and beat it with a fork. Pour the breadcrumbs into the third bowl.

Sprinkle flour on your hands, take the cooled sauce with a large spoon, roll it into a thick sausage. Roll each sausage in flour, then in egg and then in breadcrumbs. Heat vegetable oil in a deep frying pan or deep fryer.

Put the prepared croquettes on a slotted spoon, 2-4 pieces, dip in hot oil and fry for 2-3 minutes until browned. Put the finished hamon croquettes on a paper towel to remove excess oil and serve quickly, sprinkling with coarse salt.
