Zucchini Paste – Spanish zucchini recipe with Parmesan. This is a very easy and quick recipe; it takes literally 10-15 minutes to prepare and requires a minimum of ingredients. The most important thing is not to overcook the zucchini ribbons so that they do not turn into mush. They should remain slightly crispy. For a more interesting taste, the finished zucchini can be sprinkled with dried oregano or dried basil.

The recipe for zucchini pasta is very simple. Slice the zucchini thinly using a mandalin or vegetable peeler. Then cut into ribbons approximately 5-7 mm wide. Heat olive oil in a frying pan, add finely chopped garlic and heat until the garlic begins to release its aroma.

Then place the zucchini in the pan, add water, salt, pepper and simmer over medium heat for 5-7 minutes. It may take less time; the zucchini should not turn into mush. Place the prepared zucchini pasta onto a plate previously sprinkled with Parmesan and serve warm or cold.
