Zucchini and apple pancake – light snack or breakfast. This recipe uses rice flour so it can be cooked by people who eliminate gluten from their diet. Small detail, rice flour is sweetish, but this can be easily compensated for with sauce. Flax is added to the recipe to form gluten, which is not found in rice flour. To form that very gluten and your pancakes do not crumble like shortbread cookies, flax must be chopped and steamed in boiling water for 30 or 40 minutes.

The recipe for zucchini and apple fritters is very simple. First you need to prepare all the products, grind flax in a mortar or grind in a coffee grinder. After flax, pour 3 tbsp. boiling water, stir and set aside for 30-40 minutes.

Grate the zucchini on a coarse grater, transfer to a sieve or cheesecloth and squeeze well so that as much liquid as possible comes out. Do the same with apples.

In a deep bowl, combine all the ingredients, season with salt and pepper. Bake pancakes in a preheated skillet in vegetable oil. And then serve with sauce.
