Apricot Pennik – a recipe for Ukrainian cuisine, a very delicate dessert with a delicate taste and aroma of apricots.

Recipe Ingredients

Apricot 500 g
Egg White 8 pcs
Sugar 200 g
Butter 0,5 tsp
Breadcrumbs 1 tbsp
Water 200 ml
Citric Acid 1 pinch

Cooking Recipe

For the Ukrainian cuisine recipe apricot foam wash the fruit, remove the seeds, add water and put on medium heat. When the apricots are soft, rub them through a sieve and mix with sugar and citric acid.

Whisk the egg whites until stiff peaks form and gently fold in the grated apricots. Lubricate the baking dish with butter, sprinkle with breadcrumbs, put the foam in the form and put in the oven pennik to 140-150°C (285-300°F). Bake apricot pennik for 50-60 minutes.
