- Potatoes 200 g
- Bell pepper 200 g
- Tomatoes 100 g
- Onion 50 g
- Carrots 30 g
- Parsley 20 g
- Barley 25 g
- Vegetable oil 50 ml
Warm Vegetable Salad with Pearl Barley Recipe
For the recipe of Ukrainian cuisine, warm vegetable salad with pearl barley, peel the potatoes, cut into slices and fry in vegetable oil. Transfer the fried potatoes to a separate pan, and saute finely chopped onions, parsley root and diced carrots in a pan. At the end of the passivation, add sliced sweet peppers and tomatoes.
Combine sautéed vegetables with fried potatoes, add separately boiled pearl barley, salt, pepper, pour a small amount of broth or water and simmer until cooked. This vegetable salad is served warm.
