Pisto Manchego – Spanish cuisine recipe, vegetables and ham in La Manche. The dish is so named because of the region of origin.

Recipe Ingredients

Onion 2 pcs
Ham 150 g
Eggplants 2 pcs
Bell Pepper 2 pcs
Tomatoes 5 pcs
Garlic 4 cloves
Parsley 1 bunch
Olive Oil 5 tbsp
Eggs 4 pcs

Cooking Recipe

To cook pisto manchego cut the ham into small cubes and fry until slightly golden brown in olive oil. Finely chop the onion and garlic and add to the ham.

Pepper to clear of seeds and partitions and chop not coarsely. When the onion is translucent, add the pepper to the ham and onion.

Then add finely chopped eggplants, stir and fry over medium heat for 10-12 minutes.

Then add finely chopped tomatoes, chopped herbs, salt, pepper to a pan with vegetables and simmer for another 10 minutes. Transfer the finished pisto manchego onto a prepared dish and decorate with boiled eggs.
