Potato stew with chicken (chicken bozartma) is a recipe for Azerbaijani cuisine, easy to cook and very tasty dish. Bozartma cannot be attributed to soups, but it is not very similar to main courses either - it is essentially a thick soup or potatoes with chicken and a lot of broth. But it is definitely very, very tasty and easy to cook. Often this is a lifesaver for the hostess when you need to feed the family or when guests unexpectedly arrived. For bozartma, you can use not only a whole chicken, but also its individual parts.

Cooking Recipe

To cook the recipe of Azerbaijani cuisine chicken bozartma, peel the onion, cut into half rings and pour into a deep thick-walled pan or roasting pan with heated oil. Take the chicken apart, you can use separate parts - thighs, wings or drumstick. Peel potatoes and cut into large pieces.

Melt butter in a frying pan, add chopped onion and fry. When the onion is soft, add the chicken pieces, stir and fry until the chicken is slightly golden. Then add chopped potatoes and water or broth so that it only covers the food, salt, pepper, cover and simmer over low heat until the potatoes are ready. 5 minutes before readiness, add bay leaf, leave chicken bozartma under the lid on 10 minutes, and then arrange on plates and serve, sprinkled with herbs.
