For the Jewish recipe vinaigrette boil the beets and potatoes in their skins. Soak beans for 3-4 hours, and then boil.

Peel boiled potatoes and beets, cut into small cubes and mix with diced cucumbers, boiled beans and cabbage. Finely chop the onion and add to the rest of the ingredients.

Mix everything well, add finely chopped cilantro, pepper, salt, pour vinegar to taste and vegetable oil. Don't feel sorry for the oil - vinaigrette absorbs it well, and dry vinaigrette is not so tasty. Put the finished salad in the refrigerator and cool.
