Sekerbura – an Azerbaijani cuisine recipe, yeast pastry pies with nut and sugar filling. Although these are pies, they are very different from ordinary yeast pies, and not only in appearance, but also in taste. Sekerbura patterns are made using a special tool, but you can do with ordinary tweezers. Sekerbura is traditionally cooked for the Novruz Bayram.

Recipe Ingredients

Wheat Flour 260 g
Milk 100 ml
Butter 4 tbsp
Eggs 1 pcs
Salt 1 pinch
For Filling
Walnut 1 cup
Sugar 200 g
Cardamom 0.5 tsp

Cooking Recipe

To cook Sekerbura recipe, dissolve the yeast in warm milk, add salt, melted butter, vanilla sugar, beat in the egg and mix well. Continuing to stir, pour the sifted flour in parts and knead the dough. Cover the dough and put in heat for 1-1.5 hours.

While the dough is coming, cook the filling by mixing chopped nuts, sugar and cardamom. To make the filling more flavorful, nuts can be lightly roasted in a dry frying pan.

Thinly roll out the finished dough, cut out circles with a recess or a glass, put a small amount of filling on one side of the circle and pinch it.

Twist the scallop and apply a herringbone pattern with tweezers. Put prepared sekerbura onto a lightly greased baking sheet and put in an oven preheated to 180°C (355°F). Bake pies for 7-10 minutes, avoiding browning.
