For the gougères recipe, pour milk into water, add butter, salt and place over medium heat. When the butter is completely melted, bring everything to a boil, and, without ceasing to stir with a wooden spoon, gradually add the sifted flour. Cook the dough in this way until a smooth consistency is obtained, and that it does not lag behind the walls of the dish.
Transfer the dough to a food processor and beat, breaking in one egg at a time. Then add salt, 100 g of grated cheese, black pepper, nutmeg to the dough and mix everything well.
Transfer the prepared dough to a piping bag fitted with a fluted nozzle and place on a baking sheet lined with parchment paper. Top the gougères with the remaining grated cheese and place in the oven preheated to 200°C (390°F). Bake gougères for 20 minutes.
