Recipe Ingredients

Cooking Recipe

For the skordalia recipe, wash the potatoes and boil them in their skins until tender. Peel the garlic and crush with salt. Squeeze the juice from the lemon and combine with the oil.

Peel the boiled potatoes and mash with garlic, adding juice and oil in small portions. Knead everything until a homogeneous mass is obtained. Skordalia must be cooked quickly so that the potatoes do not have time to cool.
