Lentil Salad – Swedish recipe, warm and hearty salad with aromatic herbs and balsamic vinegar. This salad goes well with the dinner table as a main course.

Recipe Ingredients

Red Lentils 500 g
Onion 2-3 pcs
Bell Pepper 1 pcs
Thyme 2 twig
Rosemary 1 twig
Parsley 2-3 twig
Balsamic Vinegar 2-3 tbsp
Butter 2 tbsp
Olive Oil 2 tbsp

Cooking Recipe

The recipe for lentil salad is very simple. Wash the lentils and boil until half cooked. Fry the sweet peppers in a dry frying pan, then peel and cut into strips.

Melt half the butter in a frying pan, add olive oil and stir. Place the onion cut into slices into the frying pan. When the onion becomes translucent, add the tomatoes cut into quarters. As soon as the tomatoes begin to release juice, add the lentils, stir and cook over medium heat for another 5-7 minutes.

Place the salad in a deep bowl, add finely chopped thyme, parsley, rosemary, remaining butter and stir. Pour salad with balsamic vinegar, salt and pepper, stir and serve warm.
