To cook a recipe for Indian cuisine, potatoes in spicy tomato sauce, heat oil in a pan or wok. In a frying pan with oil, add finely chopped onion, curry leaves, de-seeded and chopped hot pepper, and fry until the onion turns brown.
Finely chop the tomatoes, add to the pan to the onion and spices, mix, reduce the heat and simmer for 2 minutes, stirring occasionally. Then add the grated ginger, chopped garlic, ground red pepper, chopped cilantro, coriander and salt.
Mix everything, and after 2 minutes add the peeled and diced potatoes, cover and simmer over low heat until the potatoes are soft. When potatoes are cooked, add lemon juice. When serving potatoes in tomato sauce, garnish with boiled eggs cut into quarters.
