For the domatokeftedes recipe, wash the tomatoes, blanch with boiling water and peel. Remove the seeds and juice from the tomatoes, then finely chop and put in a colander to drain excess liquid. Lightly squeeze the tomato pulp and mix with grated cheese, finely chopped onion, chopped mint and sifted flour. Salt the tomato mass, pepper and refrigerate for 15 minutes.

Heat vegetable oil in a frying pan, put the tomato mass with a tablespoon and fry on both sides for 2-3 minutes. When domatokeftedes are ready, place them on paper towel to remove excess oil. Serve the tomato fritters slightly chilled.
